Fuel price goes down in Thailand

Just heard the announcement on TV stating that the price of benzine will be reduced by 50satang (5sen)per litre with effect from tomorrow morning. That's definitely good news to all living in Thailand!

I feel very much at home here though it's much smaller compared to the ones back home in the Klang Valley, Malaysia. The 'Pasar Ramadhan' operates from 3 till 6+pm. Once the Azan Maghrib is on air, all the vendors disperse and leave for home. To get here, take the BTS towards Mo Chit station and alight at Ratchathewi station(N1). Soi 7 is about 300metres away from the station.

Menu for today's Iftar

Fish Asam Pedas

Kerabu Pegaga

Ingredients:
A bunch of pegaga, chopped
2 shallots, sliced
2 cherry tomatoes, sliced
1 Thai chilly, julienned; add more if prefer spicy
1 red chilly
4 tbsp dried shrimp, soaked in water
1 tsp sugar
a dash of fish sauce
salt to taste
1 tbsp lime juice
Drain the soaked shrimp and pound it with the red chilly. Cook in microwave oven on high for 1-2 minutes. Put aside.
Combine all ingredients in a bowl. Add half of the cooked dried shrimp and toss in the bowl. Scoop the dish onto a plate and garnish with the remaining cooked dried shrimp.

Hawaian seafood spaghetti

Spaghetti sauce in cooker

Walla...Bon Apetit!


Ingredients
250g spaghetti, boiled and drained
2 tbsp butter
4 tomatoes, diced
1 big onion, sliced
1 clove garlic, crushed
1 tsp chilli paste
1 cup shitake mushroom
1 cup broccoli
1 cup chopped pineapple
400g shrimps, shelled
2 medium-sized squid, cut into 1 in. pieces
coriander sprigs, chopped
oregano, chopped
parsley, chopped
1 tbsp olive oil
salt and pepper to taste
parmesan or cheddar cheese, grated

Prepare spaghetti as stated in the instruction on the plastic wrap.

Spaghetti sauce
Melt 2 tbsp butter and sautee sliced onion and garlic till fragrant. Add chilli paste for about 2 minutes and throw in the tomatoes and chopped pineapple. Stir and leave it till it becomes watery. Add shrimps and squid, leave it to cook. Lastly, add the mushroom, broccoli, olive oil, oregano, parsley, spaghetti, salt and pepper. Cut off power (since I'm using electric multi-purpose cooker) and keep on stirring. Scoop onto 2 plates of spaghetti.

Just before serving, sprinkle some shopped coriander and cheese. Place in the microwave oven on high for 1 minute to melt the cheese.

Serves 4.

Beef Noodle Soup - Kuay Teow Neua Nam Khon


Ingredients
A 2 -lb. package of fresh rice noodles
1/2 kg. tender cut of steak, thinly sliced in bite-size strips (optional)
8-10 beef meat balls, cut in half or leave whole (optional)
1/2 tsp. ground white pepper
4 cups bean sprouts(too-a ngork)
4 cups morning glory (poong fai daeng) cut into pieces
1 cup short coriander(puk chee) sprigs
4 big onions(hom yai), cut in thin rounds
Fried garlic oil - 8 cloves of chopped garlic fried in 1/4 cup of oil

Beef Soup
A whole beef shank (about 1 to 1 1/2 kg)
8 cups water
2 star anise
2 stalks lemon grass(ta krai), cut in 2-inch segments and crushed
2-inch section galangal (kah), crushed
4-5 kaffir lime leaves
1 garlic clove, crushed whole
20 white peppercorns, cracked
1/2 cup coriander roots and stem sections, crushed
5 shallots(hom lek), leave whole
1 tbsp. palm or brown sugar, to taste
1 tsp. salt(gleua)
4 or more tbsp. fish sauce(nam pla), to taste
Chilli Sauce
10 red and green Thai chillies, chopped
2 red chillies, chopped
6 cloves garlic, chopped
1/3 cup lime juice (nam manao)
2-3 tbsp. fish sauce, to taste
2-3 tsp. sugar(nam dtan), to taste


Place the whole beef shank and all the herbs, spices and flavour ingredients in a large pot. Add water and bring to boil. Reduce heat to low and simmer until the shank is tender (4 hours). Remove shank and strain the broth. Slice into bite-size chunks and return to strained broth.

Separate the noodles as much as possible into single strands.

Make the fried garlic oil and prepare the remaining ingredients.

When the soup is ready, boil a large pot of water. Toss the beef meat balls into the pot and while it is cooking, blanch the noodles, bean sprouts and morning glory for just a few seconds - a handful at a time, enough for one serving. Drain quickly and place in an individual serving-sized bowl and spoon a few pieces of stewed beef and broth over the noodles.

Next, blanch a few pieces of the sliced steak in the hot water, just enough to cook to medium rare. Arrange beef slices over the noodles and spoon one or more pieces of meat balls into the bowl.

Sprinkle with sliced onions, dust with white pepper and top with fried garlic oil (both garlic pieces and a little oil) and coriander sprigs.

Repeat to make more bowls of noodles.


Chilli sauce

Pound the chopped chiles and garlic to a paste with a mortar and pestle. Combine with the remaining sauce ingredients and let sit to allow the flavors to blend and mingle. Sauce should be equally sour and salty with a hint of sweetness.

Serve immediately.
Makes 8-10 servings.

Shrimp porridge with crab meat and mushroom


Ingredients:
2 cups of rice (khao)
8 cups of water(nam)
500g shrimps(kung); shelled and chopped
1/2 cup of crab meat(poo)
2 cups of mushrooms(hed)
5 cherry tomatoes(ma khuea teet)
5 shallots(hom lek) - pounded
1 garlic(krathiam) -pounded
3cm ginger(khing)-pounded

Seasoning:
Salt (gluea)
pepper (prik tai)

Boil water with shrimp heads, pounded shallots, garlic, ginger and 1 cherry tomato. Leave it boiling for about ten minutes. Remove the shrimp heads. Add rice, chopped shrimps and crab meat. Further boil it leaving the rice to cook. Add mushrooms and season to taste. Garnish with chopped tomatoes and coriander sprigs.

p.s. I like to have mine with a dash of lime juice(nam manao) and fish sauce(nam pla)
